Cajun Hen Salad by Katherine Lynch.



1/2 tablespoon oil

300 g coumara

Salt and pepper

300 g rooster breast

1 teaspoon cajun spice mix

2 cups combined lettuce leaves

1 tablespoon dressing (elective)


1. Preheat oven to 180°C.

2. Peel and cube the kumara, drizzle with a drop of oil, season with salt and pepper. Place on a baking sheet lined with non-stick paper. Bake within the oven for 30-35 minutes

3. Lower the rooster breast into cubes, season with salt and pepper. Pour a drop of oil into the pan, fry the rooster in oil for 6-8 minutes.

4. Sprinkle rooster with Cajun seasoning and toss. Proceed cooking uncovered till golden brown.

5. Take away the cooked kumara from the oven, let cool.

6. Take away the completed rooster from the pan, let cool

7. Assemble a salad of lettuce, chilly kumara and rooster.

8. Drizzle with slightly dressing (elective).
